Zested Orange Coconut Yoghurt

I'm in super in love with this creamy goodness over my breakfast granola.

Ingredients

300 ml coconut milk
finely grated zest of 1 orange
1 tablespoon maple syrup
1 tablespoon orange juice

DIRECTIONs

1: Put the coconut milk, orange zest, maple syrup and orange juice in a medium saucepan and whisk together. Place over medium heat and allow the mixture to come to the boil. Reduce the heat and simmer for 2 minutes or until the orange zest becomes aromatic. Remove from the heat and transfer to a small bowl. Set aside to cool.

Once it has cooled, place in the fridge and allow to chill further before serving. I am super in love with spooning this creamy goodness over my breakfast granola.


Note:  This little combo can be made into a yoghurt if you want to add a probiotic and use your yoghurt maker. Just follow a basic yoghurt recipe. This will be your milk substitute.
