Vanilla Orange Lemonade Fizz

This is such a beautiful, refreshing drink. It’s perfect for any summer's night dinner party.
300 ml lemon juice
200 ml orange juice
200 g raw sugar (or you can use coconut sugar if you like)
1 vanilla pod
1 litre soda water
3 mint sprigs
5 strawberries, quartered
6 lime wedges
6 lemon wedges
Makes 1.25 litres
1: Place the lemon and oranges juices, sugar, vanilla pod and 2 cups water in a saucepan over high heat. Bring to the boil, then reduce the heat and simmer for 5 minutes or until the sugar has dissolved and the mixture has a syrupy texture. Remove from the heat and leave to cool completely. Pull out the vanilla pod and cut it in half lengthways. Remove the vanilla seeds and add them to the syrup, then pour the syrup into a glass bottle. The syrup will keep in the fridge for a few months.
2: To mix, combine the soda water with 1 cup of the syrup. Add the mint, strawberries, lemon and lime wedges and stir well.
