Lemon & Ginger Cordial

finely grated zest of 3 lemons
juice of 6 lemons
2 tablespoons finely grated ginger
1/2 cup agave nectar
mint ice cubes (optional)
1: Place the lemon zest, lemon juice, ginger, agave and 1 litre water in a medium saucepan and bring to the boil. Reduce the heat and simmer for 20–30 minutes or until reduced and well flavoured. Pour into a bottle and leave to cool completely before chilling in the fridge.
2: Serve with mint ice cubes or any other herb you like.
Note: I think I have a crush on making elixirs and other drinkables goodies. This was my first of many drinks. It’s perfect for a picnic or keep it in the kitchen fridge for those ‘unexpected adventures’.
