Sour Cherry & Rose Petal Granola

INGREDIENTS

1 cup coconut chips
1/2 cup almond meal
1 cup shredded coconut
1 cup steel-cut oats
2 heaped tablespoons ground cinnamon
1/2 cup chopped sour cherries
1 cup chopped dried figs
1 cup almonds, roughly chopped
1/2 cup unsprayed rose petals
1/2 cup coconut oil
1/2 cup maple syrup
1 teaspoon finely grated orange zest
juice of 1 orange

Makes 600 g

DIRECTION  

1: Preheat the oven to 150ºC and line a large baking tray with baking paper.

Combine all the dry ingredients in a large bowl. Add the wet ingredients and massage through the dry ingredients with your hands.

Tip the mixture onto the prepared tray and spread out evenly. Bake for 15–20 mins or until golden brown, gently tossing the granola halfway through. Allow to cool completely before serving.

Notes: Breakfast used to be my worst nightmare – I never knew what I wanted to eat, and felt bad about eating sweet things. Then I learnt what good sugars were and how to balance my diet. 

This goes so well with my coconut yoghurt and fresh berries or other seasonal fruit. It’s great as a snack too.

Treat this recipe as a base: for example, you can take out the dried fruit if it’s not your thing and mix it up with different nuts. Make it the way you like it.
