Brookies Gin & Tonics



Makes 6

6 Damson plums

6 lemon myrtle leaves



180 ml Brookes gin

Capi dry tonic


1: Place a native plum in the bottom of each glass or cup, then use a wooden stick or the back of a fork to smash the plum open. Crush each lemon myrtle leaf in the palm of your hand to release the oils and add to the plums.

2: Add as much ice as you would like and about 30 ml gin to each glass, then top up with tonic water and enjoy the mind-blowing flavours.
