EVOO Nectarines with Coconut Sugar

INGREDIENTS

8 nectarines, halved, stones removed
(you could also use other stone fruit such as peaches or plums) 
2 tablespoons Red Island Extra Virgin Olive Oil
1/3 cup coconut sugar

vanilla ice cream or yogurt 

———

Equipment:
Portable gas stove
Medium cast-iron frying pan

method

Light your portable gas stove, but charcoal or even an open fire would also be great also. Place a medium frying pan on the gas cooker and allow it to heat up. Add the nectarines, drizzle in the olive oil and sprinkle the coconut sugar over the top. Cook for about 4 minutes or until the nectarines are soft and slight stewed. 

Serve the nectarines hot with a big dollop of vanilla yogurt or ice cream.
