Cheese and Bread with Tomato salsa
INGREDIENTS
Soft cheese such as brie or burrata
Sourdough Bread sliced and toasted
Salt
Tomato and capsicum salsa:
1 cup diced heirloom tomatoes
1 cup chopped capsicum
1 large golden shallot, thinly sliced
juice of 1/2 lemon
salt
Cobram Estate EVOO
Equipment:
Barbecue, fire pit, toaster (anything to toast the bread with)

HOW TO MAKE IT
Mix together the tomato, capsicum, shallot, lemon juice and salt to taste. Toss through enough EVOO to loosen it up a bit, and that’s it!
Toast your bread arrange the cheese on the plate with the bread leave a spot for the salsa and drizzle with some EVOO and enjoy as the sun sets.
