Chewy Coconut Gluten-Free Cookies
INGREDIENTS
2 Large Eggs
4 Tablespoon Sugar
1 Cup Unsweetened Coconut Flakes
1 Pinch Kosher Salt
1/2 Cup Chopped Semisweet Chocolate
5 Tablespoon Butter, Melted And Cooled To Room Temperature
Sea Salt, For Serving

HOW TO MAKE IT
When ready to cook, set Traeger temperature to 375° F (190°C) preheat, lid closed for 15 minutes.
Line a baking tray with parchment paper.
In a bowl, add the eggs and sugar, and whisk till mixed. Then add the coconut Sakes, salt, chocolate and butter. Stir until fluffy.
Let the batter sit for 20 minutes so that the coconut can absorb some of the liquid and swell.
Spoon the piles onto the tray and shape into a pyramid. Place tray on the grill and bake for 10 to 15 mins till golden on top. Sprinkle with sea salt and enjoy!
