Coal Bread

Ingredients

3 cups plain flour
350 ml warm water, plus extra if needed
7 g active dry yeast
extra virgin olive oil, for drizzling
thinly sliced garlic (optional)

HOW TO MAKE IT

  1. Tip the flour into a large bowl. Make a well in the centre and add the warm water and yeast. 

  2. Bring the dough together with your fingers, then turn out onto a floured surface and knead for 10–15 minutes or until it becomes smooth and slightly sticky. You might need to add more water if the dough is dry. Return the dough to the floured bowl and cover with a clean tea towel. Rest in a warm spot for 1 hour or until it doubles in size. 

  3. Light your fire and let it burn down until you obtain coals. 

  4. Grab the dough and flatten it out until it’s about 3 cm thick. Toss it in the coals for 5 minutes, then, using tongs, flip it over and cook for another 5–10 minutes or until the bread sounds hollow when you tap it. Don’t worry if the crust gets a little burnt – it just adds to the flavour!

  5. Eat straight out of the coals with a good drizzle of olive oil and some sliced garlic if you have a hankering for garlic bread.
