Coconut & Pear Campfire Cake

Ingredients

3/4 cup milk
1 tbsp lemon juice
185g softened butter
3/4 cup raw sugar
2 eggs
3/4 cup almond meal
3/4 cup flour
1 sachet of dry yeast
1/3 cup desiccated coconut
1 peach or pear, thinly sliced length ways

HOW TO MAKE IT

  1. Light your fire and let it burn down until you obtain a medium heat. You want coals rather than flame. Line your Dutch oven with baking paper.

  2. Pour the milk and lemon juice into the bowl and mix well. Add the butter, sugar, eggs, almond meal, flour, dry yeast and coconut and mix with a wooden spoon until combined. Pour the batter into the prepared Dutch oven and arrange the sliced fruit on top any way you like.

  3. Put the lid on the Dutch oven and place in the coals of the fire. Shovel some extra coals on top and allow to cook for about 30 minutes. I would check after 15 minutes – you might wanna grab some fresh sticks to put under the oven to prevent the bottom burning.
