Creamy Overnight Oats with Roadside Berries

 

When summer starts to end and autumn is in the air, the blackberries start to ripen. You can find them all over, and I just happened to pull up at a beach that had a bush right next to where we were camping in our RV. I love being able to forage along my journey and make some memories.

Ingredients

1 cup milk (your choice of dairy, almond, cashew or coconut milk), plus extra if needed
1/2 cup rolled oats
1 tablespoon chia seeds
1/2 cup coconut yogurt
Sliced apple with a squeeze of lemon
Your choice of berries (blackberries, strawberries, etc.)
Mixed seeds and nuts

  1. HOW TO MAKE IT

  2. Place the milk, oats and chia seeds in a jar or container and give them a good stir. Refrigerate overnight or for at least 2 hours.

  3. In the morning, add more milk if needed to achieve your preferred consistency. Transfer to a bowl with the coconut yogurt and top with apple, berries, and your choice of seeds or nuts for a bit of crunch.
