Fire Peaches


I find that after a big meal, you want something light, sweet and slightly acidic. This dessert is one I cook for most of my "Fire Feasts." You can play around with the liquid used, such as using whisky, amaretto, or wine, depending on what your guests are drinking and what you have an abundance of. It’s such a joy to serve and everyone wants more! You can easily switch out the peaches for other seasonal fruits, such as figs or apricots.

Ingredients

8 peaches (halved, stones left in)

1 cup amaretto  

1 cup heavy whipping cream (chilled)

2 tablespoons white sugar

Equipment:

Fire pit, cast iron pan

HOW TO MAKE IT

  1. Light your fire and let it burn down for 1 hour. 

  2. In a pan, add the sugar and place the peach halves face down. Place the pan on the coals of the fire, add the amaretto, and let it flambé (catch fire).    

  3. Cook for 15 to 30 minutes until the peaches become soft. Flip the peaches and allow them to cook until ready to serve. 

  4. In a metal mixing bowl, add the cream and sugar, and whip until stiff peaks form.  

  5. When ready, remove the peaches from the heat and allow them to cool slightly. Serve in a bowl with whipped cream.
