Hemp Granola with Blueberries
People often buy granola, but when you have a oven its so satisfying to make a batch and keep it in the cupboard for your road trip, blubberers are in season thought New England and they make for a great sauce of antioxidant, the best ting about this recipe is your RV will smell like cinnamon heaven while its cooking. Im not sure the batch will make it to the cupboard.
Ingredients
1 cup rolled (porridge) oats 1/2 cup hemp seeds
1/2 cup puffed rice
1 cup walnuts crushed
1/4 cup cashew butter
3/4 cup agave nectar
1/4 cup coconut oil
1/2 teaspoon sea salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
blueberries, sliced in half
yoghurt, to serve

HOW TO MAKE IT
Preheat the oven to 350°F.
Line a large baking sheet with baking parchment.
Place the oats, hemp seeds, and walnuts in a large bowl and stir to combine.
Add the cashew butter, agave nectar, coconut oil, salt, cinnamon and cardamom to a small saucepan and warm gently, stirring occasionally, until melted and smooth. Remove from the heat and pour into the oat mixture.
Stir really well to make sure all the dry ingredients are coated.
Spread out on the prepared baking sheet and bake for 10 minutes. Remove from the oven and stir everything around, then bake for another 10 minutes or until lightly golden. Take out of the oven and set aside. It will harden as it cools.
Break up the granola into chunks and transfer to an airtight container. If you like big clumps, be very gentle with it.
In a pot add half the blueberries, add 1/3 cup of agave nectar and cook till the blubberers start to blister and you get a nice compote, about 5 minutes.
Serve with blueberries and yoghurt.
