SWEET RECIPE
Maple, banana and bacon pancakes
Ingredients
1 cup self raising flour
3 tbsp. caster
sugar
1 cup of water
Softened butter, for cooking
Maple syrup
Sliced banana
Bacon rashes (optional)
Equipment:
Gas stove
- Feeds 2 to 3 -
HOW TO MAKE IT
Turn the stove onto medium heat - or cook outside on the fire if you’re feeling adventurous!
Put the flour, sugar and water in the jar and shake well to form a smooth batter with no lumps (if you do have a few lumps, get a fork and whisk them out).
Add a good dollop of butter to your frying pan and place on the fire until sizzling. Pour in enough batter to coat the base of the pan and swirl it around to even it out. Cook until bubbles appear on the surface of the pancake, then flip it over and cook the other side. Repeat with the remaining batter, adding more butter as needed.
Serve with lots of maple syrup and banana (and bacon... because, bacon).
For the bacon, start with a cold pan and place your bacon in the pan (without crowding them) and place on the fire or stove at medium heat.
Watch the bacon sizzle and turn translucent. Turn over a few times until it’s crisp and stops sizzling.
