SOLD OUT: Pizza, Fire & Gozney Workshop
Join Sarah Glover and Chef Ines Glaser from Lupa Cotta for a day of cooking over live fire and baking & stretching pizzas.
This unique workshop will celebrate the magic of outdoor cooking. Chef Sarah will teach you how to smoke meat and vegetables over the open flames, and Chef Ines will teach you how to master her style of pizzas in a Gozney wood-burning pizza oven.
The menu will include fire-cooked pizzas and meats, as well as hung apple sauce, and salad made from a variety of vegetables from the Ecology Center. We will learn how to roast a whole chicken and porchetta, and how to make the perfect smoky stock with the leftover bones.
Food will be paired with a refreshing natural wines as we sit down to dine family style and enjoy our creations.

During this intimate day you will learn:
Fire building: Selecting wood, wood placement, fire structure and maintenance.
Cooking with the Gozney wood-fire pizza oven: Making pizzas and baking them using a wood-fire oven and propane pizza oven.
Live fire cooking: Approach to cooking over both flame and coals.
We will cook up and enjoy:
Pizza and Sandwiches: Learn how to shape and cook classic Margherita pizzas and pizza sandwiches in the Gozney Roccbox and Dome
Salad: Rainbow Salad made from a variety of vegetables from the Ecology Center
Meat: Pork Porchetta and Whole Roasted Chicken with Lemon Butter Dressing
Side: Hung Apple Sauce and vegetables
Dessert: Smokey Banana Split on coals
All this will be enjoyed with Sarah and Ines in a beautiful intimate setting at the Ecology Center in San Juan Capistrano, Southern California, where you will have a chance to reflect on the day’s learnings, enjoy fire flavor’s of the cuisine, and discuss cooking techniques with the chefs in a causal relaxed setting.
