Smoked Coffee Tri-Tip
A few weeks back my friends at Traeger Grills flew me down under for the biggest Australian BBQ festival, Meatstock! For this demo, I made sure to stop in at the ol local; Harry’s Bondi for the good stuff, Wakey Wakey ground coffee! Once the rub was ready, we pre-heated the Traeger on Super Smoke and threw in the Wanderer Tri-Tip.

Ingredients
1 (3-5 Lb) Tri-Tip (I use wanderer beef)
1 cup of good quality ground coffee
2 tablespoons of freshly ground black pepper
2 tablespoons of sea salt
Chilli optional
Smoked paprika

HOW TO MAKE IT
When you’re ready to cook, set the Traeger temperature to 225℉ and preheat with the lid closed for 15 minutes. For optimal flavour, use Super Smoke, if available.
In a small bowl, combine the ingredients. Generously season all sides of the Tri-Tip.
Insert the probe into the thickest part of the Tri-Tip. Place the Tri-Tip directly onto the grill grates, close the lid, and cook until the internal temperature reaches 130℉, 60-90 minutes.
Remove the Tri-Tip from the grill and wrap in foil. Increase the Traeger temperature to 450°F (or 500°F, if available) and preheat with the lid closed for 15 minutes.
Unwrap the Tri-Tip, re-insert the probe and return the Tri-Tip to the grill. Sear on each side for 4 minutes.
Remove the Tri-Tip from the grill and let rest for 10-15 minutes. Slice against the grain, then serve and enjoy!
