Smoked Fish Tacos
Fish tacos are always so good, it’s hard to beat. But have you ever cooked them on the Traeger? It will not disappoint! Despite being smoked, the fish retains so much moisture, you would have thought it was steamed. The flavour of the wood and rub makes for a super tasty taco - another brilliant way to use your grill!
Ingredients
1 good fillet of fish, such as barramundi or snapper
Traeger Fin and Feather Rub
10 corn tortillas
½ cup avocado dressing
1 whole cabbage
1 green chili, thinly sliced
Lime, to serve

HOW TO MAKE IT
1. Set your Traeger grill to “super smoke,” using the signature wood. Add the cabbage to the grill and smoke for 1 hour. Remove the cabbage and bump up the temperature to 180 C / 355 F.
Rub the fish in the Traeger Fin and Feather Rub. Place on the grill and cook for 30 minutes, or until the fish is cooked through.
While the fish is cooking, make your slaw. Slice the cabbage finely, and add a sliced green chili.
Heat up the tortillas on the Traeger individually. I like to serve the fish right of the grill, but you can also plate it up and serve it at the table.
Load up your taco with the fish, slaw, avocado dressing, and fresh squeezed lime, and enjoy!
