Two Onion Frittata with Aged Cheddar

Ingredients

4 eggs
2 tablespoons cow curd
sea salt and freshly ground black pepper
1 teaspoon olive oil
1/2 brown onion, sliced into rings
1/2 red onion, sliced into rings
2 garlic cloves, finely chopped 
butter
1/2 cup grated or microplaned Pyengana vintage cloth-bound cheddar

HOW TO MAKE IT

  1. Whisk together the eggs, curd, salt and pepper in a bowl.

  2. Heat the oil in a well-seasoned cast-iron frying pan over medium-high heat.

  3. Add the onion and cook for a few minutes until lightly golden, then add the garlic and cook for 30 seconds.

  4. Add a dollop of butter to the pan and swirl to spread it evenly over the base. Pour in the egg mixture and cook for about 5 minutes or until the edges are just set but not golden – check by gently lifting the edges with a knife.

  5. Remove from the heat and rest for a few minutes, then scatter over the cheddar and serve.

Enjoy with a glass of Cape Mentelle Chardonnay.
