Wagyu with Clarified Anchovy Butter

Ingredients

1 tablespoon clarified butter
1 x 50 g tin good-quality anchovies
200 g Wagyu beef
sea salt

HOW TO MAKE IT

  1. Light your fire and let it burn down for 1 hour until you have nice coals or use hardwood charcoal.

  2. Place the butter and anchovies in a small cast-iron frying pan and cook over the fire until it starts to bubble and the anchovies melt into the butter.

  3. Place a frying pan with holes in it over the fire and let it get smoking hot (or just use the grill plate). Add the beef and cook for 1-2 minutes each side or until caramelised. Transfer to a plate season with salt, then leave to rest for a couple of minutes.

  4. Dress the beef with the anchovy butter and serve with a fresh witlof or rocket salad. Simple, but so good.
