Sarah and Juan at the Ecology Center


Join Sarah Glover and Juan Peralta Ramos for a day of fire making, cooking and laughing. These workshops (for either kids or adults), will celebrate the magic of outdoor cooking utilising some of the ingredients from the 28-acre Regenerative Organic™ farm on site.

The Ecology Center is a truly magical location that strives to drive a lasting change in behaviours towards food and agriculture. By building a community and promoting education around where food comes from the Ecology Center is at the forefront of this shift towards sustainability. We’re honoured to be invited to create and be part of such a rich organisation with such a sustainable outlook and rich farm environment.

The kids workshop will teach safety around a fire and introduce approachable recipes they can recreate at home. Each child will take home a mini recipe book with activities for them to complete.

The adults workshop will explore everything from how to use a simple grill plate to how to create a dome or fire-pit. For those with a sweet tooth we’ll also be baking cakes and fruit over the coals so you can learn how to create an entire meal outdoors. We’ll finish the day sitting down in this beautiful location as a family to drink some delicious wines alongside our smoke infused lunch. Sarah and Juan will join the group to lead the cooking and also to enjoy a meal together and answer any questions.

Workshop 1: Kids

During this fun filled day kids will learn:

  • Fire building: Selecting wood, wood placement, fire structure and maintenance.

  • Cooking with fire: Approach to both flame and coal cooking under the instructions of Sarah and Juan.

  • Healthy eating: The importance of seasonal eating, a colourful plate and how to start a veggie garden at home.

  • An intro to cooking: Choosing a menu around your produce, composting, cleaning up as you go.

  • Arts & crafts: Creating a wildflower head crown that kids will take home with them.

  • Lucky door prize: Sarah’s Wild Kids cookbook will be up for grabs.

Cooking over the fire (and with a dome and tripod) your kids will create (and enjoy):

  • Starters: Cheese bread sticks.

  • Chicken: Fire chicken wings.

  • Salad: Hung rainbow salad.

  • Side: Smashed sweet potatoes.

  • Dessert: Fire chocolate bananas.

  • Drink: DIY peach herb drinks.

All this will be enjoyed with Sarah and Juan in the beautiful setting of the Ecology Center, where you will have a chance to reflect on the days learnings, enjoy fire flavours of the cuisine and discuss cooking techniques with both chef's in a causal relaxed setting.

Workshop 2: ADULTS

During this intimate day you will learn:

  • Fire building: Selecting wood, wood placement, fire structure and maintenance.

  • Cooking with fire: Approach to both flame and coal cooking.

  • Healthy eating: The importance of seasonal eating, a colourful plate and how to start a veggie garden at home.

  • Responsible eating: Choosing a menu around available produce, composting, how to be sustainable, the future of the ocean, head to tail cooking.

  • Fire dome: How to cook an entire fish, the importance of slow cooking.

  • Preparations: Stocks and sauces.

  • Ceviche: How to clean and cut the fish, proper knife skills, types of ceviche.

Cooking over the fire you will create (and enjoy):

  • Bread: Chapa bread infused with fig leaf oil.

  • To start: Ceviche with plum/blackberry seaweed served with leche de tigre.

  • For main: Whole fish over the fire stuffed with wild fennel and crème fraîche tartar.

  • For main: Dome chicken with pink peppercorn smoky romanesco sauce, sliced fresh tomatoes and basil olive oil.

  • With sides: Roasted beetroot salad with lemon verbena dressing and goats cheese, smashed sweet potatoes with ghee,

  • For dessert: Burnt amaretto peaches with marscapone and vanilla.

This will be paired with:

  • Wine: Selection of natural wines.

  • Beer: Craft beer

  • Non-alcoholic: Kombucha

All this will be enjoyed with Sarah and Juan in the beautiful setting of the Ecology Center with a photographer capturing the days fun - it will truly be a day to remember.
