Fish & Bamboo Workshop


Join Sarah Glover and Chef Juan Peralta Ramos for a day of cooking with fish and bamboo.

This unique workshop will will celebrate the magic of outdoor cooking, and you’ll learn how to cook whole fish over the open flames, as well as how to build your own cooking apparatuses out of bamboo that you’ve harvested.

The menu will include seasonal and line-caught whole fish, served with a creme fraiche tartar, as well as salad made from a variety of vegetables from the Ecology Center.

Food will be paired with a refreshing spritz as we sit down to dine family style and enjoy our creations.

During this intimate day you will learn:

  • Fire building: Selecting wood, wood placement, fire structure and maintenance.

  • Building with bamboo: how to build your own cooking apparatuses out of bamboo that you’ve harvested.

  • Cooking with fire: Approach to both flame and coal cooking.

Cooking over the fire you will create (and enjoy):

  • To start: Let’s learn how to make pizza in the Gozney Roccbox

  • Salad: Rainbow salad made from a variety of vegetables from the Ecology Center

  • Fish: Seasonal and line-caught whole fish, cooked over the fire and served with a creme fraiche tartar

  • Side: Smashed sweet potatoes

  • Dessert: Fire fruits with whipped mascarpone

All this will be enjoyed with Sarah and Juan in a beautiful intimate setting in San Juan Capistrano, Southern California, where you will have a chance to reflect on the day’s learnings, enjoy fire flavours of the cuisine, and discuss cooking techniques with the chefs in a causal relaxed setting.
